Nolche olives of Bisceglie — „Olive nolche” or „Olive nulche”

The Olive Nolche of Bisceglie are a native variety with an extraordinary flavour.

These are table olives typically prepared in various ways, each one more delicious than the last: marinated in salt, perfect for traditional and flavourful aperitifs, or fried in olive oil, either on their own or accompanied by cherry tomatoes and chilli pepper.

Another preparation that many are unaware of, rooted in the farming tradition, is cooking under the ashes: farmers who were about to begin their working day in the fields would gather around the fire to warm up and organise their work, and in the meantime would place the olives to cook under the ashes, eating them once ready before heading out to work.

The Nulche olives not only represent an authentic expression of the products of Puglia Federiciana, but also remind us of the age-old traditions tied to their preparation.
