Sospiro — a sweet of legend
The sospiro is a traditional dessert from Bisceglie, famous for its dome shape and delicate flavour. Made from a dough of flour, sugar and eggs, the sospiro is filled with pastry cream and covered with a sugar glaze known as gileppo or giuleppe.
The name sospiro — meaning "sigh" — is tied to a charming wedding legend. It is said that the Clarisse nuns of Bisceglie prepared this dessert for the wedding of Lucrezia Borgia and Alfonso d'Aragona. The couple, however, never arrived in Bisceglie, and the disappointed guests began to eat the delicious sweets — sighing.
Although there is no documentary evidence to confirm it, this legend is captivating and certainly strengthens the bond between the town and Lucrezia Borgia, who became Duchess of Bisceglie upon marrying Alfonso d'Aragona. The sospiro is a fine example of the confectionery art of Puglia Federiciana, and of Bisceglie in particular — capable of transforming simple ingredients into an elegant and delicious treat.
