Seafood cuisine
Arragan · Mussels · Stuffed mussels · Anchovies · Octopus
Apulian seafood cuisine is a fundamental element of the region's tradition, characterized by dishes that enhance the freshness and flavour of the sea.
Arragan mussels are a delicious and crispy dish. The mussels are baked in the oven with breadcrumbs, garlic, parsley, pecorino cheese and a drizzle of extra virgin olive oil.
Stuffed mussels, instead, are filled with stale bread, cheese, garlic, parsley and egg, cooked in tomato sauce to enhance the taste of all these rich ingredients, making them rich and comforting.
The anchovies, a fish widely used in Apulian cuisine, are usually served marinated with oil, lemon and parsley, or fried as a simple and delicious appetizer.
The octopus can also be cooked in different ways: grilled or braised, very often alongside potatoes or fresh salads.
These dishes reflect the maritime culture of Puglia and are a celebration of the generosity of the shallow coastal waters of the Adriatic Sea, offering visitors an authentic taste of the Apulian coast.
