Brasciola di Cavallo — horse meat rolls in tomato sauce
Brasciola di cavallo is a much-loved traditional Apulian dish.
It consists of horse meat rolls filled with garlic, parsley, pecorino cheese and lard. The rolls are browned and then slow-cooked in a rich and aromatic tomato sauce, which makes them juicy and full of flavour.
This dish is often served as a main course or as a sauce for orecchiette al ragù di cavallo, and represents one of the most iconic recipes of Apulian cuisine.
Brasciola di cavallo is an example of how local ingredients can be transformed into delicious dishes when prepared with time, experience and tradition.
The secret of these rolls also lies in the "tying" with a cotton thread and the very long cooking time, which allows the meat to absorb all the flavours and aromas of the sauce, making it incredibly tender at every bite.
