Calzone molfettese — Molfetta's iconic pie

The calzone molfettese is an iconic dish of Molfetta's cuisine, encapsulating the flavours and traditions of Apulian gastronomy.

This calzone is made with a soft and fragrant dough, which according to the oldest recipe is filled with sponsali (elongated onions with a sweet flavour), cod fillets, in particular u nuzz stubt (merluzzetto fish) or Melù/Potassolo, cauliflower, tomatoes, green olives and extra virgin olive oil. 

Every family and bakery has their own personal recipe, but the result is always a delicious calzone perfect for enjoying warm or at room temperature.

According to tradition, the calzone molfettese is prepared for Easter celebrations, but over time it has also become an everyday food that brings together tradition and flavour.

Its preparation requires time and dedication, respecting the artisanal techniques passed down through generations. It is a symbol of the city's culinary identity and an example of how the simplicity of ingredients can give life to a dish of exceptional flavour.
