U Tridd — the thousand broken pieces

U Tridd, also known as i mille infranti (the thousand broken pieces), is a traditional dish from the Molfetta area, representing an authentic expression of Apulian home cooking.

This fresh pasta format is prepared with a dough of semolina, eggs, salt, pepper, chopped parsley and grated cheese. The dough is broken into small irregular pieces, reminiscent of the mille infranti from which it takes its name.

U Tridd is cooked in a rich and aromatic meat broth — chicken, beef or a combination of both — absorbing the intense flavours of the meat.

This dish is particularly appreciated during cold winter days.

Its preparation, often passed down from generation to generation, reflects the simplicity and genuineness of Apulian cuisine, where local ingredients are transformed into dishes that warm both the heart and the soul.
